  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled (optional)
  • 1/4 cup sliced green onions
  • Sour cream or ranch dressing, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash and scrub the russet potatoes. Slice them into 1/4-inch rounds, keeping the slices as even as possible.
  3. Pat the potato slices dry with paper towels to help them crisp up.
  4. In a medium bowl, toss the potato slices with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  5. Arrange the potato slices in a single layer on the prepared baking sheet. Avoid overlapping.
  6. Bake for 20 minutes. Check at the 18-minute mark as ovens may vary.
  7. Flip each potato slice using tongs or a spatula. Bake for another 10 minutes, until golden brown and edges are crisp.
  8. Sprinkle shredded cheddar cheese and crumbled bacon (if using) over the slices. Return to the oven for 2-3 minutes, until the cheese is melted.
  9. Top with sliced green onions. Serve warm with sour cream or ranch dressing for dipping.
  10. If slices aren’t crisping, bake a few extra minutes or increase oven temperature to 450°F (230°C), watching closely to prevent burning.

Notes

For a dairy-free version, use vegan cheese. Yukon Gold or sweet potatoes can be substituted for russets. For extra crispiness, ensure potato slices are dry before baking and avoid overlapping on the baking sheet. If you want a lighter dip, use Greek yogurt instead of sour cream.
