- 8 oz elbow macaroni
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups milk, warmed
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 cups cooked chicken, shredded or diced
- 1 cup BBQ sauce
- Chopped green onions (optional)
- Extra cheese for topping (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
- In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until golden brown.
- Gradually whisk in the warmed milk, making sure to eliminate any lumps. Continue cooking, stirring frequently, until the mixture thickens (about 3-5 minutes).
- Reduce the heat to low and stir in the cheddar and mozzarella cheese, garlic powder, onion powder, and season with salt and pepper. Stir until the cheese is melted and smooth.
- Add the cooked macaroni and BBQ chicken to the cheese sauce. Stir until everything is well combined and heated through.
- Pour the mixture into an oven-safe baking dish, spreading it evenly. If desired, sprinkle extra cheese on top for an extra cheesy finish!
- Preheat your oven to 350°F. Bake for about 10-15 minutes until bubbly and golden on top.
- Once out of the oven, let it cool for a few minutes. Garnish with chopped green onions and serve hot!
