  • Vegetable oil, for frying (about 3-4 cups)
  • 1/2 cup (100g) granulated sugar, for coating
  • 2 teaspoons ground cinnamon

Instructions

  1. In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring occasionally until the butter melts and everything is combined (about 2-3 minutes).
  2. Reduce heat to low. Add flour all at once; stir vigorously with a wooden spoon until the mixture forms a thick ball that pulls away from the sides (about 1 minute).
  3. Remove from heat and let the dough cool for 5 minutes. Beat in eggs, one at a time, mixing well after each addition until the dough is glossy and smooth. Stir in vanilla extract.
  4. Transfer dough to a piping bag fitted with a large star tip (Wilton 1M or Ateco 826). If the dough is too stiff to pipe, add a teaspoon of water at a time until soft but holds its shape.
  5. Pour vegetable oil into a deep, heavy-bottomed pan to a depth of about 2 inches. Heat oil to 350°F (175°C).
  6. Pipe 1-inch pieces of dough directly into the hot oil, snipping with kitchen scissors as you go. Fry in batches, 2-3 minutes per side, until deep golden brown.
  7. Drain churro snacks on a paper towel-lined plate.
  8. Mix 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a shallow dish. Roll warm churro snacks in cinnamon sugar to coat.
