  • 23 fresh jalapeños, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Start by heating the olive oil in a large skillet over medium-high heat.
  2. While the oil is heating, season your chicken pieces with salt and pepper.
  3. Add the chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  4. Once the chicken is cooked, transfer it to a plate and set aside.
  5. In the same skillet, add the diced onion and sliced jalapeños. Sauté for about 3-4 minutes, or until the onion becomes translucent.
  6. Add the minced garlic, cumin, and smoked paprika to the skillet, stirring for about 1 minute until fragrant.
  7. Return the cooked chicken to the skillet. Stir everything together and let it cook for an additional 2-3 minutes to meld the flavors.
  8. Remove from heat and garnish with fresh cilantro and lime wedges.

Notes

Feel free to customize the spice level by adjusting the amount of jalapeños used. This dish can also be made vegetarian by substituting chicken with chickpeas or tofu.
