Delicious Overnight Blueberry French Toast Casserole

  • Author: Sofia Garcia
  • Total Time: Overnight + 45-50 minutes
  • Yield: 8 servings 1x

Description

This delightful dish is a game-changer for brunch gatherings or cozy family breakfasts, allowing you to prepare it the night before for a warm, comforting meal in the morning.

Ingredients

Scale
  • 1 loaf of French bread, cubed (about 1012 cups, preferably a day old)
  • 2 cups of fresh blueberries (or frozen, if that’s what you have)
  • 8 large eggs, room temperature
  • 2 cups of milk (whole or 2% for creaminess)
  • 1 cup of heavy cream (for that rich texture)
  • 1/2 cup of granulated sugar
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1/2 cup of brown sugar (for topping)
  • 1/4 cup of unsalted butter, melted (for topping)
  • 1 teaspoon of ground cinnamon (for topping)

Instructions

  1. Start by cubing the French bread into bite-sized pieces and place them in a greased 9×13-inch baking dish. Scatter the fresh blueberries evenly over the bread.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, ground cinnamon, and salt until well combined.
  3. Pour the egg mixture over the bread and blueberries, ensuring all the bread is soaked. Gently press down on the bread with a spatula to help it absorb the liquid.
  4. Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight (or for at least 4 hours).
  5. The next morning, preheat your oven to 350°F (175°C) while you prepare the topping. In a small bowl, mix together the brown sugar, melted butter, and ground cinnamon until crumbly.
  6. Remove the casserole from the fridge and sprinkle the topping evenly over the soaked bread mixture.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is set in the center.
  8. Once done, remove from the oven and let it cool for 5-10 minutes before serving.

Notes

Use day-old bread for best results and don’t skip the overnight soaking for maximum flavor.
