This easy fruit pizza recipe features a chewy sugar cookie crust, creamy vanilla cream cheese frosting, and a colorful assortment of fresh fruit. It’s a kid-friendly, crowd-pleasing dessert perfect for parties or snack time.
Ingredients
- 1 1/4 cups (160g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 1/2 teaspoons vanilla extract
- 8 oz (225g) cream cheese, softened
- 1/3 cup (40g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strawberries, sliced
- 1 cup blueberries
- 2 kiwis, peeled and sliced
- 1/2 cup raspberries
- 1 mandarin orange, segmented
- Optional: blackberries, mango, grapes, pineapple, or pomegranate seeds
Instructions
- Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or large baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat softened butter and granulated sugar with a hand mixer on medium speed until light and fluffy, about 2-3 minutes.
- Add egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually stir in the dry ingredients until a soft dough forms. If crumbly, gently knead together by hand.
- Press dough evenly into a 1/2-inch thick circle (about 11-12 inches across) on the prepared pan.
- Bake for 12-15 minutes, until edges are lightly golden and center is just set. Do not overbake.
- Let crust cool on the pan for 10 minutes, then transfer (with parchment) to a wire rack to cool completely.
- In a clean bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy, about 1-2 minutes.
- Once crust is completely cool, spread cream cheese frosting evenly over the surface.
- Wash and slice fruit as needed. Pat dry with a paper towel.
- Arrange fruit on top of the frosting in desired pattern. Press fruit lightly into frosting.
- Chill fruit pizza in the refrigerator for at least 30 minutes before slicing and serving.
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, substitute vegan cream cheese and plant-based butter. Use any combination of fresh fruit you like. Chill the crust before frosting to prevent sogginess. Decorate just before serving for best appearance.
