  • 1 1/2 teaspoons vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 2 kiwis, peeled and sliced
  • 1/2 cup raspberries
  • 1 mandarin orange, segmented
  • Optional: blackberries, mango, grapes, pineapple, or pomegranate seeds

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or large baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter and granulated sugar with a hand mixer on medium speed until light and fluffy, about 2-3 minutes.
  4. Add egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually stir in the dry ingredients until a soft dough forms. If crumbly, gently knead together by hand.
  6. Press dough evenly into a 1/2-inch thick circle (about 11-12 inches across) on the prepared pan.
  7. Bake for 12-15 minutes, until edges are lightly golden and center is just set. Do not overbake.
  8. Let crust cool on the pan for 10 minutes, then transfer (with parchment) to a wire rack to cool completely.
  9. In a clean bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy, about 1-2 minutes.
  10. Once crust is completely cool, spread cream cheese frosting evenly over the surface.
  11. Wash and slice fruit as needed. Pat dry with a paper towel.
  12. Arrange fruit on top of the frosting in desired pattern. Press fruit lightly into frosting.
  13. Chill fruit pizza in the refrigerator for at least 30 minutes before slicing and serving.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, substitute vegan cream cheese and plant-based butter. Use any combination of fresh fruit you like. Chill the crust before frosting to prevent sogginess. Decorate just before serving for best appearance.
