Description

Crispy on the outside and tender inside, these Parmesan zucchini fries are a healthier, oven-baked snack packed with cheesy flavor. Perfect for parties, after-school snacks, or a light lunch, they’re easy to make and loved by all ages.

  • 2 large or 3 medium zucchini (about 1 lb), ends trimmed, cut into fries or sticks
  • 3/4 cup finely grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. If using a wire rack, set it on top.
  2. Wash and dry the zucchini. Trim the ends, slice each zucchini in half crosswise, then cut each half into 1/2-inch thick sticks or fries. Pat the sticks dry with a paper towel.
  3. Set up a dredging station: Place flour in one bowl, beaten eggs in a second bowl, and combine panko, Parmesan, garlic powder, smoked paprika, Italian seasoning, salt, and pepper in a third bowl.
  4. Dredge each zucchini stick in flour, tapping off excess. Dip into the beaten eggs, then roll in the Parmesan-breadcrumb mixture, pressing gently to adhere.
  5. Arrange the coated zucchini fries in a single layer on the prepared baking sheet or rack, leaving space between each fry.
  6. Lightly mist the fries with olive oil spray.
  7. Bake for 22–28 minutes, flipping once halfway through, until golden brown and crispy.
  8. Let fries cool for 3–5 minutes before serving. Serve with your favorite dipping sauce.

Notes

Pat zucchini dry before coating for maximum crispiness. Use a wire rack for best results, but flipping fries halfway works too. For gluten-free, use almond flour and gluten-free breadcrumbs. Serve with marinara, ranch, or aioli. Don’t overcrowd the pan—bake in batches if needed.
