- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup dried lentils, rinsed
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes until fragrant.
- Add the rinsed black beans, lentils, vegetable broth, and diced tomatoes (with their juice) to the pot.
- Season the mixture with cumin, chili powder, smoked paprika, salt, and pepper.
- Bring the soup to a gentle boil, then reduce the heat to low and cover the pot.
- Let it simmer for about 25-30 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed to achieve your desired consistency.
- Once cooked, taste and adjust the seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
