Ingredients

  • 1 pound lobster meat, cooked and chopped (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1 cup diced potatoes (about 2 medium-sized)
  • 1 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 1 package refrigerated pie crusts (two crusts)

Instructions

  1. In a large saucepan over medium heat, melt the butter. Add the onions, carrots, and celery. Sauté for about 5 minutes or until softened. Stir in the flour and cook for an additional minute.
  2. Pour in the heavy cream and broth, whisking until smooth. Bring to a simmer and allow to thicken, about 3-5 minutes.
  3. Add the potatoes, peas, lobster meat, lemon juice, thyme, salt, and pepper. Stir well to combine, then remove from heat.
  4. Preheat your oven to 425°F (220°C). Roll out the bottom pie crust and place it in the pie dish. Pour the lobster filling into the crust.
  5. Cover with the second pie crust, crimping the edges to seal. Cut a few slits in the top to allow steam to escape. Bake for about 25-30 minutes or until the crust is golden brown.

Notes

Let the pot pie cool for about 10 minutes before serving to help the filling set up for easier slicing.
