- 1 pound lobster meat, cooked and chopped (fresh or frozen)
- 1 cup heavy cream
- 1 cup chicken or seafood broth
- 1 cup diced potatoes (about 2 medium-sized)
- 1 cup frozen peas
- 1/2 cup diced carrots
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 tablespoon lemon juice
- 1 package refrigerated pie crusts (two crusts)
Instructions
- In a large saucepan over medium heat, melt the butter. Add the onions, carrots, and celery. Sauté for about 5 minutes or until softened. Stir in the flour and cook for an additional minute.
- Pour in the heavy cream and broth, whisking until smooth. Bring to a simmer and allow to thicken, about 3-5 minutes.
- Add the potatoes, peas, lobster meat, lemon juice, thyme, salt, and pepper. Stir well to combine, then remove from heat.
- Preheat your oven to 425°F (220°C). Roll out the bottom pie crust and place it in the pie dish. Pour the lobster filling into the crust.
- Cover with the second pie crust, crimping the edges to seal. Cut a few slits in the top to allow steam to escape. Bake for about 25-30 minutes or until the crust is golden brown.
Notes
Let the pot pie cool for about 10 minutes before serving to help the filling set up for easier slicing.
